Cactus pears (purple, yellow, green) boost the immune system, prevent cancer, help keep a healthy weight, prevent osteoporosis, improve blood glucose response and digestion. They got amino acid score of 95, higher than 69 for burger king hamburger. That means a more complete protein. When you go to a store, it is better to buy the purple ones, as they are healthier than the yellow, orange or green ones. The dark purple ones are extra loaded with anthocyanidin flavonoid anti-oxidants (just like the purple cabbage has 2800 times more anthocyanidins than green cabbage). For comparison with another fruit, cactus pears have 9 times more fiber, 8 times more Calcium, 8.5 times more Magnesium and 2 times more potassium than watermelon. Cactus pears actually have more Magnesium than any other fruit or vegetable and more Calcium than most fruits, 11 times more Calcium and 3 times more Magnesium than bananas for example. Since raw eggs have amino acid score of 136 (http://nutritiondata.self.com/facts/dairy-and-egg-products/111/2), and biological value of protein is 72.6 for cactus pear with respect to eggs (http://onlinelibrary.wiley.com/doi/10.1002/jsfa.2740350410/abstract), it may be that the cactus pear amino acid score is somewhere around 0.726*136=99. This score, if accurate, is much higher than all fruits except kiwi 105 and avocado 129., hamburger beef 69, milk 85, most veggies. I have not found the amino acid score on http://nutritiondata.com site for cactus pear, but it seems to be a good protein.
